I've always used card sharp and had never seen the other. The OED suggests that the term is originally US and from card-sharper.

I've seen both variants used. I'd probably use card sharp myself.

As might be expected, Wikipedia has an article.

I've always used card shark. I don't remember hearing card sharp. I probably have and just heard it as card shark. I noticed the Wikipedia article included another variant: card snark.
