Whenever people sneeze, people say, "Bless you!" I've come to say it as well. Yet, as a child I only heard "Gesundheit!" Is that because I was raised in Wisconsin? Or has that interjection changed over time? What do those of you in other countries say, if anything?

Over here its always "Bless You".

In New Jersey, it's "Don't get that stuff on me!" We can be callous.
