 I've always used card sharp and had never seen the other. The OED suggests that the term is originally US and from card-sharper. —Ceci n'est pas un seing. | |||

 I've seen both variants used. I'd probably use card sharp myself. As might be expected, Wikipedia has an article. Build a man a fire and he's warm for a day. Set a man on fire and he's warm for the rest of his life. | |||

 I've always used card shark. I don't remember hearing card sharp. I probably have and just heard it as card shark. I noticed the Wikipedia article included another variant: card snark. | |||
